Costa Rica is yet another country on the map of our coffee journeys
It is a country with a high standard of living and a stable economy, which directly affects the cost and quality of coffee production.
We had a unique opportunity to work together with Gonzalo Hernandez at his botanical farm Coffea Diversa, located in the Biolley region. This farm is one of the largest private coffee botanical gardens in the world, where more than 100 rare and unique Arabica varieties are grown. Among the most famous varieties are Geisha, Laurina, Bourbon Rey, Mokka, Sudan Rume, and Maragogype.
Coffea Diversa was created to preserve the genetic diversity of coffee and study how different varieties perform under the same terroir conditions. For us, collaborating with Gonzalo was a wonderful opportunity not only to analyze the flavor characteristics of different varieties but also to conduct joint fermentation experiments. This experience undoubtedly expanded our understanding of how genetics influence coffee flavor.
