Non-Fermented Coffee

While fermentation typically plays a key role in developing our coffee's vibrant character, we've used an alternative method for those seeking uncompromised terroir expression — Double Washed Citric Process.

The core objective of this technique is to completely eliminate fermentation during processing. We achieve this by using only the ripest cherries. Immediately after depulping, we remove all residual mucilage from the parchment coffee using a low-pH citric acid solution. The beans then undergo thorough washing with pure water before moving to the drying stage.

The result is coffee of exceptional purity, showcasing the true character of the selected variety without any influence from fermentation.
